  • 2 Tbsp coconut oil
  • 1 large onion
  • 4 garlic cloves
  • 1 Tbsp fresh ginger
  • 2 Tbsp red curry paste
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • 1 Tbsp tomato paste
  • 2 Tbsp brown sugar or honey
  • Optional: chili flakes for heat

Instructions

  1. Prepare your ingredients by cutting the beef into chunks, slicing the onion, mincing the garlic, and grating the ginger.
  2. In a heavy-bottomed pot, heat coconut oil over medium heat. Add sliced onion and cook until translucent. Stir in garlic and ginger; sauté until fragrant.
  3. Incorporate red curry paste, cumin, turmeric, cinnamon, and optional chili flakes. Mix well with onions before adding beef chunks; sear until browned.
  4. Pour in coconut milk and beef broth, then add tomato paste and brown sugar. Bring to a gentle boil, reduce heat to low, cover, and simmer for about 2 hours until beef is tender.
  5. Taste and adjust seasoning with fish sauce or soy sauce if necessary before serving hot over jasmine rice.
