  • 3 cups cooked white rice (or brown rice)
  • 2 cups shredded cooked chicken (or leftover turkey)
  • 1 can cream of chicken soup
  • 1 can French onion soup
  • 1 cup sour cream (or dairy-free yogurt)
  • 1 cup shredded cheese (Mozzarella or Swiss)
  • 1 cup French fried onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt
  • to taste black pepper
  • 1/4 cup chopped parsley (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the cooked rice, shredded chicken, cream of chicken soup, French onion soup, sour cream, garlic powder, onion powder, salt, and black pepper. Mix well.
  3. Fold in half of the shredded cheese into the mixture.
  4. Transfer the mix to a greased 9×13 inch baking dish and spread evenly.
  5. Top with half of the French fried onions.
  6. Bake for about 35 minutes until heated through and bubbly.
  7. Let cool slightly before serving; add remaining fried onions and chopped parsley on top.
