  • 6 chicken sausages (about 14 oz total, any flavor)
  • 1 onion, chopped
  • 2 celery stalks, sliced
  • 2 carrots, sliced
  • 2 garlic cloves, minced
  • 1/2 tsp dried thyme
  • 3 tbsp all-purpose flour
  • 4 cups chicken or vegetable broth
  • 2 bay leaves
  • 1/2 cup wild rice (about 3.5 oz)
  • 3 medium potatoes, peeled and chunked
  • Salt, to taste
  • 1 1/2 cups light cream or half-and-half

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté chopped onion, celery, carrots, and minced garlic until softened (5-7 minutes).
  2. Add chicken sausages and brown them on all sides to enhance flavor.
  3. Sprinkle in dried thyme and flour; stir well and cook for another minute.
  4. Gradually pour in broth while stirring continuously; add bay leaves and wild rice. Bring to a boil.
  5. Once boiling, add chunked potatoes, reduce heat to low, and cover. Simmer for about 30 minutes until potatoes are tender.
  6. Remove bay leaves, add salt to taste, and stir in light cream or half-and-half before serving.
