  • 3.4-oz box instant pistachio pudding mix
  • 1/2 cup unsalted butter, softened
  • 1 cup + 1 TBSP sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/2 cup milk
  • 1 1/4 cup fresh whole cranberries
  • 1/4 cup chopped pistachios

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a stand mixer, cream together unsalted butter and sugar until light and fluffy.
  3. Add eggs and vanilla extract; mix until fully combined.
  4. In a food processor, chop cranberries with sugar until roughly chopped, then mix into the batter.
  5. In a separate bowl, whisk together flour, baking powder, salt, and pistachio pudding mix.
  6. Gradually add dry ingredients to the wet mixture while alternating with milk; stir in chopped pistachios.
  7. Pour the batter into the prepared loaf pan and bake for 55-65 minutes or until a toothpick comes out clean.
