  • 12 oz. crawfish (defrosted if frozen)
  • 12 large eggs
  • 4 T. mayonnaise
  • 2 T. Creole mustard
  • 1 stalk celery (rinsed)
  • 1 T. green onions (chopped finely)
  • 1 T. fresh chopped parsley
  • 1 t. Louisiana hot sauce
  • 1/4 t. Cajun seasoning salt
  • ¼ t. Cajun Seasoning

Instructions

  1. Hard-boil the eggs by placing them in a medium pot covered with water. Bring to a gentle boil for 2 minutes; then turn off heat, cover, and let sit for 11 minutes.
  2. Drain eggs in a colander under warm running water and peel once cooled.
  3. In a mixing bowl, mash yolks with mayonnaise, mustard, finely chopped celery, hot sauce, and Cajun seasoning until smooth.
  4. Fold in crawfish gently and spoon or pipe the mixture back into the egg whites.
