  • 2 rings turkey sausage, sliced into ¼-inch slices
  • 3 tablespoons unsalted butter
  • 1 large yellow onion, chopped
  • 2 medium carrots, peeled and diced into ¼-inch pieces
  • 2 teaspoons garlic, minced
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ cup all-purpose flour
  • 3 cups chicken broth
  • 1 cup whole milk
  • 2 cans Great Northern white beans, rinsed and drained
  • Fresh parsley, for garnish

Instructions

  1. In a large pot over medium-high heat, add vegetable oil and brown the sliced turkey sausage for 7–9 minutes. Remove from the pot and set aside.
  2. Melt butter in the same pot. Add onion, carrots, garlic, salt, and pepper; sauté for 10–12 minutes until softened.
  3. Sprinkle flour over vegetables and stir; cook for an additional minute.
  4. Gradually add chicken broth and whole milk; stir well and bring to a simmer.
  5. Return browned turkey sausage to the pot along with drained white beans.
  6. Simmer on medium-low heat for 15–20 minutes until thickened.
