  • 1 lb boneless skinless chicken breast or thighs
  • 12 oz rotini pasta
  • 2 tbsp olive oil
  • 1 tbsp butter (for searing)
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & black pepper, to taste
  • 2 tbsp butter (for sauce)
  • 4 cloves garlic, finely minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 4 oz cream cheese, softened
  • 1 cup Velveeta, cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Pinch of red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Boil rotini in salted water until al dente (10-11 minutes). Drain and set aside.
  2. In a skillet, heat olive oil and 1 tbsp of butter over medium-high heat. Season chicken and sear for 6-8 minutes until golden brown. Remove from skillet.
  3. In the same skillet, melt 2 tbsp of butter and sauté garlic for 30 seconds until fragrant. Add heavy cream and milk; whisk until smooth. Incorporate cream cheese and stir until melted. Add Velveeta until fully melted and creamy, then add mozzarella and Parmesan.
  4. Combine cooked rotini with the cheese sauce, folding gently until coated. If it thickens too much, add a splash of reserved pasta water.
  5. Serve pasta topped with seared chicken and garnish with chopped parsley.
