  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup crumbled feta cheese
  • 1/2 cup Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 1 garlic clove, minced
  • 23 tablespoons olive oil
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley or dill, chopped
  • 1/4 cup Kalamata olives (optional)

Instructions

  1. Season chicken cubes with olive oil, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper.
  2. In a skillet over medium heat, cook seasoned chicken for 6–8 minutes until golden brown and cooked through.
  3. Meanwhile, mix feta cheese, Greek yogurt, lemon juice, minced garlic, olive oil, salt, and pepper in a bowl until smooth.
