  • 1 leek (white/light green part)
  • 1 large carrot
  • 4 garlic cloves
  • 2 tbsp flour
  • 1 cup dry white apple vinegar
  • 4 cups chicken stock
  • 2 cups water
  • Parmesan cheese (+ rind)
  • 7-9 lasagna pieces (broken)
  • 1 cup chopped chicken (rotisserie)
  • 1 cup heavy cream
  • ¾ cup shredded mozzarella cheese
  • 1-2 cups chopped spinach

Instructions

  1. Chop the onion, leek, carrot, and garlic. Sauté in a large pot with olive oil until softened.
  2. Add flour, stir for a minute, then deglaze with apple vinegar.
  3. Incorporate chicken stock and water; bring to a bubble and simmer partially covered for about 20 minutes.
  4. Remove parmesan rind and thyme; add broken lasagna pieces.
  5. Stir in heavy cream, mozzarella cheese, chopped chicken, and spinach.
  6. Serve hot with extra cheese or fresh herbs on top.
