  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 4 cups beef broth
  • 1 (14.5-ounce) can diced tomatoes (with juice)
  • 1 (15-ounce) can whole kernel corn, drained
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup diced potatoes
  • 1 cup heavy cream or half-and-half
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • Sliced green onions
  • Extra shredded cheese
  • Crushed tortilla chips

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Add diced onion and minced garlic; sauté until onion is translucent.
  2. Pour in the beef broth and add diced tomatoes, corn, black beans, and potatoes. Stir to combine.
  3. Season with smoked paprika, chili powder, ground cumin, salt, and black pepper; mix well.
  4. Bring to a boil then reduce heat to low; cover and simmer for about 20 minutes until potatoes are tender.
  5. Remove from heat; stir in heavy cream or half-and-half along with shredded cheddar cheese until melted.
  6. Serve in bowls garnished with sliced green onions, additional cheese, and crushed tortilla chips.
