  • 1 ½ lb chicken breasts
  • 4 carrots, sliced
  • 3 celery stalks, chopped
  • 1 onion, diced
  • 8-10 cups low sodium chicken broth
  • 1 cup uncooked wild rice
  • 4 garlic cloves
  • 1 bay leaf
  • 1 Tbsp Italian seasoning
  • 1 tsp thyme
  • 1 tsp parsley
  • ½ tsp sea salt
  • ½ tsp cracked pepper
  • ¼ cup flour
  • ½ cup half and half
  • ½ cup whole milk

Instructions

  1. Dice the onion, chop the carrots and celery, and mince the garlic.
  2. Place chicken breasts at the bottom of the slow cooker; add garlic and seasonings.
  3. Layer with onion, carrots, celery; pour in chicken broth and add rinsed wild rice. Toss in bay leaf.
  4. Cover and cook on low for 6-8 hours until rice is tender.
  5. Shred cooked chicken and return it to the pot.
  6. Whisk together flour, half and half, and milk; stir into soup until creamy. Adjust consistency with more broth if needed.
  7. Serve warm with optional fresh herbs as garnish.
