  • 3 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • 4 teaspoons sweet mild paprika
  • 1 tablespoon chopped fresh dill
  • 3 cups low-sodium chicken broth or vegetable broth
  • 1 ½ cups whole milk
  • ¾ cup sour cream
  • ½ cup chopped fresh parsley

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the mushrooms and onions; cook until onions are translucent (about 15 minutes). Transfer to a bowl.
  2. In the same pot, melt butter over medium heat. Whisk in flour, paprika, dill, salt, and pepper for about one minute.
  3. Deglaze with vinegar, then gradually whisk in the broth. Stir in the reserved mushroom mixture; simmer for about five minutes.
  4. Add milk and sour cream; bring back to a simmer. Stir in vinegar before removing from heat and fold in parsley.
