  • 12-16 ounces Garden rotini pasta (cooked)
  • ½ Medium red onion, minced
  • 1 Cucumber, diced
  • ½ Pint grape tomatoes, halved
  • 1 Medium yellow bell pepper, diced
  • 3 tablespoons Italian vinaigrette dressing
  • 1 cup Mayonnaise
  • 1 + 1/4 teaspoons Cajun seasoning
  • 1/8 teaspoon Ground black pepper
  • ½ teaspoon White sugar

Instructions

  1. In a large pot, bring water to a boil.
  2. Add the Garden rotini pasta and cook according to package instructions until al dente.
  3. Drain the pasta using a colander and rinse it under cold water to cool down.
  4. In a large mixing bowl, combine mayonnaise, Italian vinaigrette dressing, Cajun seasoning, ground black pepper, and white sugar.
  5. Mix well until all ingredients are thoroughly combined.
  6. Add the cooled pasta along with minced red onion, diced cucumber, halved grape tomatoes, and diced yellow bell pepper into the mixing bowl.
  7. Gently mix everything together until well coated with the dressing.
  8. Cover the mixing bowl with plastic wrap or transfer to an airtight container.
  9. Chill in the refrigerator for 1 to 3 hours before serving.
