1 tablespoon olive oil
12 oz turkey sausage links (casings removed)
10 oz potato gnocchi
1 cup heavy cream
1/3 cup chicken broth
1 cup pumpkin puree
3 cloves garlic (minced)
4 oz fresh spinach
2 tablespoons fresh sage (chopped)
2 tablespoons fresh thyme
Salt and coarsely ground black pepper
Instructions
In a large skillet, heat olive oil over medium heat. Add sliced turkey sausage and cook until browned on both sides (about 6 minutes total). Drain excess fat.
Stir in potato gnocchi, heavy cream, and chicken broth. Bring to a boil, cover, and simmer for 5 minutes.
Add pumpkin puree and garlic; stir well. Incorporate fresh spinach and return to a boil. Reduce heat and cook until spinach wilts (about 3 more minutes).
Stir in half of the sage and thyme; season with salt and pepper to taste. Garnish with remaining herbs before serving.
