  • 1 tablespoon olive oil
  • 12 oz turkey sausage links (casings removed)
  • 10 oz potato gnocchi
  • 1 cup heavy cream
  • 1/3 cup chicken broth
  • 1 cup pumpkin puree
  • 3 cloves garlic (minced)
  • 4 oz fresh spinach
  • 2 tablespoons fresh sage (chopped)
  • 2 tablespoons fresh thyme
  • Salt and coarsely ground black pepper

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add sliced turkey sausage and cook until browned on both sides (about 6 minutes total). Drain excess fat.
  2. Stir in potato gnocchi, heavy cream, and chicken broth. Bring to a boil, cover, and simmer for 5 minutes.
  3. Add pumpkin puree and garlic; stir well. Incorporate fresh spinach and return to a boil. Reduce heat and cook until spinach wilts (about 3 more minutes).
  4. Stir in half of the sage and thyme; season with salt and pepper to taste. Garnish with remaining herbs before serving.
