2 lbs fresh tomatoes (Roma or vine-ripened), halved
1 whole head of garlic
1 small onion, chopped
2 tbsp olive oil
2 cups vegetable or chicken broth
½ cup heavy cream or coconut milk
¼ cup fresh basil leaves
Salt and black pepper to taste
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Arrange halved tomatoes on the baking sheet, drizzle with 1 tbsp olive oil, and season with salt and pepper. Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and place alongside the tomatoes.
Roast for 30-35 minutes until caramelized.
In a large pot over medium heat, sauté chopped onion in remaining olive oil for about 5 minutes until softened.
Squeeze roasted garlic from its skin into the pot. Add roasted tomatoes and juices along with broth and fresh basil.
Blend until smooth using an immersion blender or standard blender.
Return to heat, stir in cream or coconut milk, simmer for an additional 5-10 minutes, then adjust seasoning as needed.
