  • 1 can (28oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup heavy cream or full-fat coconut milk for dairy-free
  • 5 oz baby spinach
  • 1/2 cup grated Parmesan cheese or plant-based alternative
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Boil a large pot of salted water and cook the gnocchi according to package instructions until they float. Drain gently.
  2. In a skillet over medium heat, add olive oil and sauté the chopped onion until softened.
  3. Stir in the minced garlic and tomato paste; cook for another minute.
  4. Pour in the crushed tomatoes, adding dried herbs and seasonings. Simmer for 15-30 minutes.
