  • 1 medium onion, diced
  • 3 medium bell peppers, diced
  • 1 cup uncooked rice (or quinoa)
  • 28 oz can diced tomatoes
  • 4 cups beef broth
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing and dicing the onion and bell peppers. Measure out the rice or quinoa.
  2. (Optional) Brown the ground beef or turkey in a skillet over medium heat until fully cooked; drain excess fat.
  3. In the slow cooker, combine the browned meat (if using), diced onions and bell peppers, rice or quinoa, diced tomatoes, beef broth, Italian seasoning, salt, and pepper. Stir well.
  4. Cover and cook on low for about 6 hours or until rice is tender and flavors meld together.
