  • 2 – 15 ounce cans cannellini beans
  • 1 cup frozen corn
  • 2 – 10 ounce cans fire roasted tomatoes and green chiles
  • 2 cups low sodium chicken broth
  • 4 oz cream cheese (room temperature)
  • 4 oz cottage cheese (blended)
  • 1/2 cup Franks Buffalo Sauce
  • 1 tbsp chili powder
  • 2 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  1. Gather all ingredients and thaw chicken if frozen.
  2. Add chicken, cannellini beans, frozen corn, fire-roasted tomatoes, chicken broth, and spices into the slow cooker.
  3. Mix well until combined.
  4. Cover and cook on low for 4-6 hours or on high for 3-4 hours until chicken is cooked through.
  5. Remove chicken and shred it using two forks or a hand mixer.
  6. Stir in cream cheese until smooth and return shredded chicken to the slow cooker.
  7. Cook on low for another 30 minutes before serving.
