  • 6 chicken thighs (bone-in, skin-on)
  • 8 oz jar roasted red peppers (drained and cut into strips)
  • 1 cup mixed olives (green and kalamata)
  • ½ medium onion (sliced)
  • 2 Tbsp olive oil
  • 1 Tbsp honey (or monk fruit sweetener for keto)
  • Juice of 1 lemon
  • 6 garlic cloves (finely chopped)
  • 1 Tbsp fresh oregano (chopped)
  • 1 Tbsp fresh parsley (chopped)
  • 1 Tbsp fresh thyme
  • ½ tsp black pepper
  • ¼ tsp salt

Instructions

  1. Sear the chicken thighs in a skillet over medium-high heat until golden brown on both sides. Transfer to a slow cooker.
  2. Arrange roasted red peppers, olives, and sliced onion around the chicken in the slow cooker.
  3. In a mixing bowl, whisk together olive oil, honey (or sweetener), lemon juice, garlic, oregano, parsley, thyme, salt, and pepper. Pour over the chicken.
  4. Cover and cook on high for 3-4 hours or low for 6-8 hours until the chicken reaches an internal temperature of 185°F.
