  • 1/2 cup butter (softened)
  • 1/3 cup oil (vegetable or canola oil)
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 2 tsp Butter vanilla emulsion
  • 2 & 1/3 cup flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/2 package instant vanilla pudding mix (Half of 3.4 oz)
  • 1/2 cup milk
  • 4 oz cool whip
  • 1 medium banana (slightly ripe, chopped roughly)
  • Nilla wafers (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar using an electric mixer until fluffy. Mix in the egg and butter vanilla emulsion.
  3. In another bowl, whisk flour, salt, and baking powder before gradually adding it to the wet mixture until combined.
  4. Scoop dough onto a parchment-lined baking sheet and bake for about 8 minutes until lightly golden.
  5. For the topping, mix instant vanilla pudding with milk until thickened, then fold in cool whip and chopped banana.
  6. Once cookies have cooled, top with the banana cream mixture and add a Nilla wafer.
