  • 1/4 cup sugar
  • 1 teaspoon unflavored vegan gelatin
  • 2 tablespoons cold water
  • 4 ounces white chocolate chips
  • 2 1/2 tablespoons milk
  • 1 tablespoon powdered sugar
  • 1 cup heavy whipping cream
  • 3-4 drops pure peppermint oil
  • 1/4 cup heavy whipping cream
  • 3 1/2 ounces bittersweet or dark chocolate
  • 2 teaspoons light corn syrup
  • 2 tablespoons very warm water

Instructions

  1. 1. Preheat oven to 350°F. Combine ground graham crackers, melted butter, and sugar in a mixing bowl. Press into a tart pan and bake for 10 minutes. Cool.
  2. 2. Bloom vegan gelatin in cold water for about 5 minutes. Microwave until dissolved.
  3. 3. Melt white chocolate; whisk in heated milk, bloomed gelatin, and peppermint oil until smooth.
  4. 4. Whip heavy cream with powdered sugar to medium-stiff peaks and fold into the white chocolate mixture gently.
  5. 5. Fill cooled crust with mousse and refrigerate until set (a few hours or overnight).
  6. 6. For the glaze, heat cream to a boil; stir in dark chocolate until smooth. Mix in corn syrup and warm water.
