  • 3 ½ cups peeled fresh ginger
  • 4 cups water
  • 5 cups white sugar
  • 1 (3 oz) pouch liquid pectin
  • 5 half pint canning jars with lids and rings

Instructions

  1. Cut the ginger in half; cube one half and shred the other.
  2. In a large pot, simmer cubed ginger with water for about 1 hour and 15 minutes. Reserve ½ cup of the liquid after draining.
  3. Chill the cooked ginger in the refrigerator for at least 4 hours.
  4. Combine chilled ginger, reserved water, and sugar in a pot; boil for 1 minute while stirring.
  5. Stir in liquid pectin and simmer gently for about 7 minutes, skimming foam if necessary.
  6. Sterilize your jars in boiling water before filling them with the hot marmalade mixture.
  7. Process filled jars in boiling water for about 15 minutes to seal properly.
  8. Let jars cool completely at room temperature before checking seals.
