  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can red enchilada sauce (10 oz)
  • 8 flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil or bake chicken until fully cooked; shred it.
  3. In a skillet over medium heat, sauté onion and garlic until soft.
  4. Add shredded chicken to skillet; season with cumin, chili powder, salt, and pepper.
  5. Pour a small amount of enchilada sauce into a baking dish.
  6. Fill tortillas with chicken mixture and cheese; roll tightly and place seam-side down in the dish.
  7. Pour remaining enchilada sauce over rolled enchiladas; top with cheese.
