  • 1/2 cup tapioca pearls (small uncooked kind)
  • 1/2 cup sweetened condensed milk (or condensed coconut milk for dairy-free)
  • 13.5 fl oz full-fat coconut milk (room temperature)

Instructions

  1. Cook the tapioca pearls: Boil 5 cups of water in a medium pot, add tapioca pearls, reduce heat, and cook for about 10 minutes while stirring. Cover and let soak for another 10-15 minutes until translucent.
  2. Rinse the cooked tapioca under cold water in a fine mesh sieve until cool.
  3. Mix the coconut milk until smooth and combine it with the drained tapioca in a large bowl.
  4. Blend approximately 17.6 oz strawberries with sweetened condensed milk until smooth.
  5. Fold the blended strawberry mixture into the bowl with tapioca and coconut milk; adjust sweetness if needed.
  6. Dice remaining strawberries and add as a topping before serving.
