  • 4 large tortillas
  • 250 g microwave rice (Mexican-flavored)
  • 200 g fresh salsa
  • 400 g black beans (drained and rinsed)
  • 125 g grated mozzarella
  • 2 tsp sunflower oil
  • 1 onion (peeled and chopped)
  • 1 tsp mild chili powder
  • 1 tsp sweet smoked paprika
  • 2 tsp ground cumin
  • 1 tbsp dark brown sugar
  • 3 tbsp tomato puree
  • 1 beef stock cube (undiluted and crumbled)
  • 100 ml boiling water
  • Salt and freshly ground black pepper

Instructions

  1. Heat sunflower oil in a sauté pan over medium heat.
  2. Add beef mince and brown for about 5 minutes, breaking it up with a spoon.
  3. Stir in chopped onion, chili powder, smoked paprika, ground cumin, and brown sugar; cook for an additional 5 minutes until onion softens.
  4. Mix in tomato puree, crumbled beef stock cube, boiling water, salt, and pepper; stir well and simmer on low for 15 minutes until thickened.
  5. Warm tortillas and microwave rice according to package instructions.
  6. Lay out tortillas and evenly distribute rice, beef mixture, salsa, black beans, and mozzarella onto each tortilla.
  7. Roll tightly to secure fillings.
