  • 8 oz medjool dates, roughly chopped
  • 1 cup boiling water
  • 3/4 cup boiling milk
  • 1 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 2 tsp vanilla
  • 3 large eggs
  • 1 1/4 cup all purpose flour
  • 1/2 cup dutch processed cocoa powder
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 8 tbsp unsalted butter
  • 3/4 cup brown sugar
  • 1 cup cream
  • 1 cup milk
  • 200g dark chocolate
  • 1/2 tsp salt
  • Optional: 1-2 tbsp cocoa powder

Instructions

  1. Soak chopped medjool dates in boiling water for 10 minutes until soft.
  2. In a bowl, cream together softened butter and brown sugar; mix in eggs and vanilla.
  3. Combine dry ingredients (flour, cocoa powder, baking powder, baking soda, salt) in another bowl; fold into the wet mixture with the soaked dates.
  4. Preheat oven to 350°F (175°C); pour batter into a greased baking dish and bake for 25 minutes.
  5. For the sauce, melt butter in a saucepan; add brown sugar, cream, milk, and dark chocolate until smooth.
  6. Serve warm pudding drizzled with chocolate toffee sauce.
