  • 1 lb boneless chicken thighs (chopped into quarters)
  • 1 large onion (diced)
  • 1 carrot (chopped)
  • 4 small russet potatoes (peeled and chopped into quarters)
  • 3 cups chicken stock
  • 3 tbsp gochujang
  • 3 tbsp soy sauce
  • 3 tbsp garlic (minced)
  • 1 tbsp vegetable oil
  • 1 tbsp sesame oil
  • Chopped green onion (for garnish)

Instructions

  1. In a small bowl, combine gochujang, soy sauce, minced garlic, sugar, and sesame oil. Set aside.
  2. Heat vegetable oil in a medium pot over medium heat. Add diced onions and sauté until translucent.
  3. Add the chicken thighs to the pot, browning them on all sides.
  4. Stir in the chopped carrots and potatoes; cook for about 1-2 minutes.
  5. Pour in the chicken stock and add the prepared sauce mixture. Cover and bring to a boil.
  6. Reduce heat to low-medium and let simmer for 15-20 minutes until chicken is cooked through.
