  • 1 Tbsp lemon zest (from 2 lemons)
  • 1 ¾ cups sugar
  • 4 large eggs
  • ½ cup salted butter (cut into small cubes)

Instructions

  1. Prepare a double boiler by filling a medium saucepan with about 2 inches of water and bringing it to a boil. Reduce heat to medium-low.
  2. In a heatproof mixing bowl, whisk together the lemon juice, lemon zest, sugar, and eggs until well combined. Add the butter cubes.
  3. Place the mixing bowl over the simmering water and whisk continuously for about 20-25 minutes until thickened.
  4. Check the consistency; it should coat the back of a spoon and reach a temperature of 170°F.
  5. Strain through a fine mesh sieve into another bowl to remove lumps.
  6. Cover the surface with plastic wrap to prevent skin formation and let cool before refrigerating for at least four hours.
