  • 1 yellow onion
  • 2 celery ribs
  • 3 carrots

  • 1 cup pastina (or small pasta shape)

Instructions

  1. In a large pot, bring water or vegetable broth to a boil. Add onion, celery, carrots, garlic, and salt.
  2. Reduce heat to medium-low and simmer uncovered for about 45 minutes until veggies are soft.
  3. Transfer the cooked vegetables to a blender with some broth and blend until smooth. Return to pot.
  4. Cook pastina separately according to package instructions until al dente.
  5. Serve by placing pastina in bowls and pouring hot broth over it. Garnish with grated Parmigiano and enjoy.
