  • 2 tbsp Vegetable oil
  • 1 medium Onion (diced)
  • 1/2 Red bell pepper (diced)
  • 1 medium Potato (diced)
  • 4 cloves Garlic (minced)
  • 1 28-ounce can Crushed tomatoes
  • 5-6 Eggs (preferably at room temperature)
  • Fresh Cilantro or parsley (for garnish)
  • Sliced avocado and/or cheese (Feta, Parmesan, optional)
  • Toasted bread (for serving)
  • 1/2 tsp each Salt, Black pepper, Sugar (adjust to taste)
  • 1/2 tsp each Paprika, Cumin

Instructions

  1. Heat vegetable oil in a skillet over medium heat.
  2. Add diced onion, bell pepper, and potato; cook for 4-5 minutes until softened.
  3. Stir in minced garlic and cook for another minute before adding crushed tomatoes along with salt, pepper, sugar, paprika, and cumin.
  4. Cover and let the sauce simmer on low heat for 3-4 minutes.
  5. Create small wells in the sauce and carefully crack the eggs into them; season lightly with salt and pepper.
  6. Cover again and cook on low heat for 5-8 minutes until egg whites are set but yolks remain runny or cooked to your preference.
  7. Serve hot topped with fresh herbs alongside toasted bread.
