This cozy fall-inspired dish features tender beef simmered in a slightly sweet apple cider sauce with onions and carrots, served over creamy, cheesy mashed potatoes. It’s a comforting and hearty meal perfect for cooler days.

Ingredients

For the Stew:
1 tablespoon olive oil
2 tablespoons butter
3/4 lb top sirloin, cut into cubes
Salt and black pepper, to taste
2 cups apple cider
1/2 cup beef broth
1 large onion, chopped
2 medium carrots, peeled and chopped

For the Mashed Potatoes:
6 large potatoes, peeled and cubed
1/4 cup milk
1/4 cup sour cream
1 cup sharp cheddar cheese, shredded
3 tablespoons chives, chopped

Instructions

  • Heat olive oil and butter in a large pot over medium heat. Add the beef cubes, season with salt and pepper, and sear until browned on all sides. Remove and set aside.
  • In the same pot, add the chopped onion and carrots. Cook for 4–5 minutes until slightly softened.
  • Return the beef to the pot and pour in the apple cider and beef broth. Stir well to combine.
  • Bring to a simmer, then reduce heat and cook for 30–40 minutes until the beef is tender and the sauce has slightly thickened.
  • Meanwhile, place the potatoes in a pot of salted water. Bring to a boil and cook for 15–20 minutes until fork-tender.
  • Drain the potatoes and mash them with milk and sour cream until smooth.
  • Stir in the shredded cheddar cheese and chopped chives until melted and well combined. Season with salt and pepper to taste.
  • Serve the apple cider stew over a generous portion of mashed potatoes.
