  • 1/2 cup instant chocolate pudding mix (small box)
  • 2 1/4 cups buttermilk
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup water
  • 1/2 cup butter
  • 1 teaspoon vanilla
  • 1 cup baking cocoa (sifted)
  • 3 1/2 cups powdered sugar
  • 3 tablespoons heavy cream (more or less for consistency)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease the baking pans.
  2. In a large bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time and stir in the vanilla.
  3. In another bowl, whisk together cake flour, baking cocoa, baking soda, salt, and pudding mix.
  4. Gradually mix dry ingredients into wet ingredients while alternating with buttermilk until smooth.
  5. Divide the batter into prepared pans and bake for 60 minutes or until a toothpick comes out clean.
  6. Cool in pans for 15 minutes before transferring to a cooling rack.
  7. For the ganache: Melt chocolate chips with water and butter over low heat; stir in vanilla and sifted cocoa powder before adding powdered sugar until desired consistency is achieved.
  8. Once cooled, frost the cake layers with ganache.
