  • 3/4 cup granulated sugar
  • 1/4 cup water
  • 14 oz sweetened condensed milk
  • 12 oz evaporated milk
  • 1 3/4 cups heavy whipping cream
  • 1 1/2 Tbsp vanilla extract
  • 5 large eggs (room temperature)
  • 1/4 tsp fine sea salt

Instructions

  1. Preheat the oven to 350°F and boil water in a kettle for the water bath.
  2. In a medium saucepan, combine sugar and water for caramel; cook until golden brown, then pour into a non-stick cake pan.
  3. Blend sweetened condensed milk, evaporated milk, heavy cream, vanilla extract, eggs, and salt until smooth. Strain if desired.
  4. Pour custard mixture over the caramel in the pan.
  5. Cover with foil and place inside a roasting pan filled with hot water halfway up the sides of the cake pan.
  6. Bake for 70-80 minutes until slightly jiggly in the center; cool completely before refrigerating for at least 6 hours.
  7. To serve, run a knife around the edges and invert onto a platter.
