  • 1 pound boneless, skinless chicken breasts
  • 1 yellow onion
  • 2 cloves garlic
  • 3 cups low-sodium chicken broth
  • 2 cans great northern beans
  • 2 cans diced green chilies (1 spicy, 1 mild)
  • 1 can whole kernel corn
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • A small handful of fresh cilantro
  • 1/2 cup reduced-fat cream cheese
  • 1/4 cup half-and-half cream
  • Sliced jalapeños
  • Sliced avocados
  • A dollop of sour cream
  • Tortilla strips
  • Grated Monterey Jack or Mexican cheese

Instructions

  1. Prepare ingredients by chopping onion and garlic; drain and rinse beans and corn.
  2. Combine all ingredients in the slow cooker: onion, garlic, chicken breasts, chicken broth, beans, green chilies, corn, salt, pepper, cumin, oregano, chili powder, and cayenne.
  3. Cover and cook on low for about 3 hours until the chicken is tender.
  4. Shred the chicken and stir in cream cheese and half-and-half until smooth.
  5. Serve topped with jalapeños, avocados, cilantro, sour cream, tortilla strips, or cheese.
