  • 1 pound boneless, skinless chicken thighs (or breast)
  • 4 cups romaine or cos lettuce, washed and dried
  • 1 large cucumber, chopped
  • 2 roma tomatoes, chopped
  • 1 red onion, cut into slices
  • 1 avocado, cut into slices
  • 1/3 cup pitted sliced kalamata or black olives (optional)
  • 2 tablespoons olive oil
  • 1/4 cup fresh lemon juice (about 1 lemon)
  • 2 tablespoons water
  • 2 tablespoons red apple vinegar
  • 2 tablespoons chopped fresh parsley
  • 2 teaspoons dried basil
  • 2 teaspoons minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • Cracked black pepper (to your liking)

Instructions

  1. Prepare the dressing by whisking together olive oil, lemon juice, water, red apple vinegar, parsley, basil, garlic, oregano, salt, and pepper in a large mixing bowl.
  2. Cook the seasoned chicken in a heated frying pan over medium heat for about 6–7 minutes on each side until fully cooked. Let it rest before slicing.
  3. In the mixing bowl with the dressing, add chopped romaine lettuce, cucumber, tomatoes, red onion, and avocado; toss gently to combine.
  4. Top the salad with sliced chicken and olives if desired. Serve immediately with lemon wedges.
