  • 200 grams granulated sugar
  • 200 grams almond meal
  • 100 grams shelled pistachios
  • 6 large eggs
  • 1 tsp baking powder

  1. Wash and boil the whole oranges in water for about 30 minutes until soft. Allow them to cool.
  2. Cut the cooled oranges in half, remove any seeds, and puree them in a food processor.
  3. Add sugar, almond meal, ground pistachios, baking powder, and salt to the food processor; blend until combined.
  4. In a mixing bowl, whisk the eggs until frothy. Gradually mix in the orange mixture until smooth.
  5. Preheat your oven to 180°C (350°F) and prepare a 9-inch round cake pan with parchment paper.
  6. Pour the batter into the pan, smoothing out the top with a spatula.
  7. Bake for 45-50 minutes or until golden brown; check with a toothpick for doneness.
