  • 1 cup Silk Unsweetened Vanilla Almond Milk
  • 1 large egg
  • 2 to 3 tablespoons liquid-state coconut oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups blueberries

Instructions

  1. In a large mixing bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix almond milk, egg, coconut oil, and vanilla until well combined.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined; do not overmix.
  4. Fold in blueberries carefully to prevent excessive color bleeding.
  5. Preheat a non-stick skillet over medium heat; lightly spray with cooking spray.
  6. Pour batter onto the skillet using a 1/4-cup measure. Cook until bubbles form on top (about 3 minutes), then flip and cook for an additional 2-3 minutes or until golden brown.
