  • 1 cup powdered sugar
  • 1/4 tsp pumpkin pie spice
  • 1/4 cup heavy cream
  • 2 tsp instant espresso powder
  • 4.5 oz white chocolate, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice.
  3. Cream together butter, granulated sugar, and brown sugar until fluffy. Mix in egg yolks and vanilla.
  4. Gradually add pumpkin puree to the creamed mixture until combined.
  5. Slowly incorporate dry ingredients into the wet mixture without overmixing.
  6. Drop spoonfuls onto a lined baking sheet and bake for about 12 minutes until edges are golden.
