3 pounds beef short ribs
6 yellow onions, thinly sliced
3 tablespoons butter
2 tablespoons olive oil
4 sprigs fresh thyme
4 garlic cloves, minced
2 bay leaves
8 cups beef stock
1 cup red apple vinegar
1 teaspoon salt
1 teaspoon black pepper
1 French baguette, sliced
2 cups shredded Gruyère cheese
Instructions
Season the short ribs generously with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat. Brown the short ribs on all sides until they develop a nice crust. Remove them from the pot and set aside.
Add butter and more olive oil to the same pot. Stir in the sliced onions and cook on low heat for 30 to 40 minutes until they are caramelized and golden brown.
Add minced garlic to the pot and cook briefly until fragrant. Pour in red apple vinegar to deglaze, scraping up any browned bits from the bottom of the pot. Allow it to reduce for a few minutes.
Add beef stock, thyme sprigs, bay leaves, and return browned short ribs to the pot. Cover and let simmer for 2.5 to 3 hours until meat is tender enough to fall apart.
Preheat your broiler. Place baguette slices on a broiler pan and toast until golden brown. Top each slice with shredded Gruyère cheese and return to broiler until melted and bubbly.
Remove bay leaves and thyme stems from the soup before serving. Ladle soup into bowls and top with cheesy Gruyère toast.
