  • 2 garlic cloves
  • 50g butter
  • 1200ml beef stock
  • 15g fresh thyme
  • 400g baguette
  • 150g Comté cheese
  • Olive oil
  • Salt
  • Black pepper

Instructions

  1. Peel and slice the onions thinly. In a large saucepan over medium heat, add 2 tablespoons of olive oil and the sliced onions with a pinch of salt.
  2. Cook the onions for about 30 minutes until they are soft and pale golden, stirring occasionally.
  3. Add finely sliced garlic and butter to the pan; cook for an additional 5 minutes until fragrant.
  4. Pour in the beef stock while scraping the bottom of the pan to deglaze, then add thyme leaves. Let it simmer for another 10 minutes.
  5. Adjust seasoning to taste before portioning the soup into oven-proof bowls.
  6. Top each bowl with slices of baguette and generous amounts of grated Comté cheese.
  7. Broil under a hot grill until the cheese is melted and golden brown. Serve hot.
