  • 2 large sweet onions (Vidalia)
  • 6 tablespoons butter
  • 4 cups beef broth
  • 1.5 cups chicken broth
  • ¾ cup apple vinegar
  • 6 slices Gruyere cheese
  • 1 baguette

Instructions

  1. Slice the onions into ¼-inch thick pieces.
  2. In a large soup pot, melt butter over medium-low heat, then add onions. Cook uncovered for up to 2 hours, stirring every 10-15 minutes until caramelized.
  3. Sprinkle flour over the onions and cook for an additional 2 minutes before adding beef broth, chicken broth, apple vinegar, bay leaves, and thyme. Simmer for about 45 minutes.
  4. Preheat oven to 350°F, slice baguette, and toast for about 5 minutes.
