Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the cod fillets under cold water and pat dry.
  3. In a bowl, mix olive oil, minced garlic, lemon juice, salt, and pepper; brush over the cod.
  4. Combine cooked quinoa, chopped parsley, lemon zest, panko breadcrumbs, and olive oil in another bowl until crumbly.
  5. Place cod on a baking sheet lined with parchment paper and press the quinoa mixture onto each fillet.
  6. Bake for 15-20 minutes until the cod flakes easily and the crust is golden brown.
