  1. Boil the tortellini: Cook cheese tortellini according to package instructions in salted water until al dente. Reserve 1 cup of pasta water before draining.
  2. Steam the broccoli: Steam fresh broccoli florets for 3-4 minutes until bright green and crisp-tender. Plunge into ice water, drain, and set aside.
  3. Sear the chicken: Season chicken breast (cut into cubes) with salt and pepper. Heat olive oil in a skillet over medium-high heat, searing chicken until golden brown and cooked through (about 6-8 minutes). Remove from skillet.
