  • 4 green or slightly yellow plantains
  • 4 cloves garlic, minced
  • 2-3 tbsp olive oil or butter
  • 1 lb medium shrimp, peeled and deveined
  • Salt and pepper to taste

  1. Peel plantains and cut into 1–2 inch pieces. Boil in water until tender (about 10–15 minutes) or fry until golden.
  2. In a mortar and pestle, mash boiled plantains with minced garlic and olive oil or butter. Season with salt and pepper.
  3. Heat olive oil or butter in a skillet over medium heat. Sauté minced garlic until fragrant, then add shrimp seasoned with salt and pepper. Cook for about 3–4 minutes per side until pink.
  4. Mold mofongo onto plates and top generously with cooked shrimp. Drizzle pan juices over the dish.
  5. Serve immediately with lime wedges for added zest.
