  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk (or milk mixed with vinegar)
  • 1 1/2 cups fresh blueberries
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1/4 cup sliced almonds (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream the softened butter and sugar until light and fluffy using an electric mixer.
  4. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk until just combined.
  6. Gently fold in the blueberries using a rubber spatula.
  7. Pour the batter into the prepared pan and smooth the top.
  8. For the topping, mix sugar, cornstarch, lemon juice, and cinnamon in a small bowl; sprinkle over the batter.
  9. Bake for about 40-45 minutes or until a toothpick comes out clean.
  10. Let cool for about 10 minutes before transferring to a wire rack to cool completely.
