2 garlic cloves
1 lime
2 boneless skinless chicken thighs
15 grams fresh ginger
1 red chili
1 tablespoon curry powder
350 ml water
250 grams microwave rice
Olive oil, salt, black pepper
Fresh coriander and mint for garnish
Instructions
Marinate chicken: Grate half the garlic into a bowl, squeeze in lime juice, season with salt, and coat chicken thoroughly. Let marinate for at least 30 minutes.
Prepare aromatics: Slice remaining garlic, cut ginger into matchsticks, and finely slice red chili.
Cook chicken: Heat olive oil in a frying pan over medium heat. Add marinated chicken and cook until charred and cooked through (10-15 minutes). Rest on a plate.
Make broth: In the same pan, sauté ginger, garlic, and chili for 3 minutes; add curry powder and cook for another minute. Pour in water and simmer for 5 minutes; finish with lime juice and seasoning.
Serve: Reheat microwave rice as per package instructions. Divide rice into bowls, pour broth over it, top with sliced chicken, and garnish with fresh herbs.
