  • 2 lbs beef chuck, cubed
  • 3 tbsp olive oil
  • 1 onion, diced
  • 2 ribs celery, diced
  • 4 carrots, diced
  • 3 garlic cloves, minced
  • ¾ cup red apple vinegar
  • 6 cups low-sodium beef broth
  • 1 tbsp Worcestershire sauce
  • 1 cup pearled barley
  • Salt and pepper to taste
  • ¼ cup parsley, minced

Instructions

  1. Season beef cubes with salt and pepper. In a large pot over medium-high heat, add olive oil and sear the beef until browned on all sides. Remove and set aside.
  2. In the same pot, sauté onions, celery, and carrots for about 5 minutes until softened. Add garlic and cook for another minute.
  3. Deglaze the pot with red apple vinegar, scraping up browned bits while reducing the vinegar by half.
  4. Return beef to the pot along with beef broth, Worcestershire sauce, and thyme. Bring to a simmer and cook for about 45 minutes.
  5. Stir in pearled barley and continue simmering for an additional 45–60 minutes until both barley and beef are tender.
  6. Adjust seasoning as needed and stir in minced parsley before serving.
