  • 2 flatbread crusts (homemade or store-bought)
  • 2 tablespoons olive oil
  • 1/2 cup spinach pesto
  • 8 oz. shredded mozzarella cheese
  • 1 cup halved grape tomatoes
  • 1/2 cup thinly sliced red onion
  • 2.25 oz. can sliced black olives
  • 1 cup quartered artichoke hearts
  • 1/2 cup crumbled feta cheese
  • 1 teaspoon dried oregano
  • Kosher salt to taste
  • Fresh chopped parsley for garnish
  • Fresh arugula leaves for garnish

Instructions

  1. Preheat the oven to 500 degrees Fahrenheit.
  2. If using homemade flatbreads, prepare them according to your recipe and par-bake as needed. Alternatively, use store-bought flatbreads.
  3. Brush both crusts lightly with olive oil for added flavor.
  4. Spread an even layer of spinach pesto over each crust.
  5. Evenly distribute shredded mozzarella on top of the pesto.
  6. Layer on halved grape tomatoes, sliced red onion, black olives, artichoke hearts, crumbled feta cheese, and sprinkle with dried oregano and kosher salt.
  7. Bake in the preheated oven for 5–10 minutes until the cheese melts and veggies are tender.
  8. Garnish with fresh parsley and arugula before slicing and serving.
