  • 6-8 onions
  • 2 pounds ground beef
  • 1 cup Arborio rice
  • 2 cups pureed tomatoes
  • Fresh parsley
  • 2-3 tablespoons olive oil
  • 1 onion, finely chopped
  • 5-6 garlic cloves, grated
  • 1 and 1/2 teaspoons salt or to taste
  • freshly cracked black pepper
  • 1/3 cup finely chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried mint
  • 1 teaspoon dried dill
  • 2 cups onion broth

Instructions

  1. Cut the tops and bottoms off the onions and peel them. Boil in salted water for 10-15 minutes until softened. Reserve onion broth.
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onion until softened, then add garlic and ground beef; cook until browned.
  3. Stir in rice and reserved onion broth, cooking until absorbed (about 6-8 minutes). Remove from heat.
  4. Carefully stuff each onion layer with the filling and arrange them seam-side down in a baking pan.
  5. Mix sauce ingredients together and pour over the stuffed onions. Cover with foil.
  6. Bake at 400°F (200°C) for about 45 minutes covered, then uncover and bake an additional 35-45 minutes until tender.
