  • 1 lb ground beef (or ground turkey)
  • 2-3 roasted green chiles (Hatch or poblano), chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium tomatoes, diced
  • 1 large potato, peeled and diced
  • ½ cup peas (optional)
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp dried oregano
  • Salt and pepper (to taste)
  • ¼ cup beef broth or water
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté onion until translucent, about 5 minutes. Add garlic and cook for another minute.
  3. Add ground beef to the skillet; brown evenly for 7-10 minutes.
  4. Stir in diced tomatoes, chopped green chiles, diced potato, and optional peas.
  5. Season with cumin, coriander, oregano, salt, and pepper; mix well.
  6. Pour in beef broth or water; cover and simmer for 15-20 minutes until potatoes are tender.
